Tahini Sauce

This sauce is the supreme ruler of all things saucy and flavourful. It has the divine power to turn even the blandest meal into pure blissful awesomeness, using only four ingredients!! Some of my favorite uses for it include:
  • Use it as a salad dressing
  • Drizzle it onto soups for extra creaminess, flavor and beautiful presentation
  • Use it as a dip for roasted root vegetable fries
  • Pour it over a heaping plate of fresh steamed greens
  • Eat it out of the jar with a spoon!!! (nomnomnom)

As is the case with all simple recipes, the key to success with this sauce is to use quality ingredients. Make your own roasted sesame tahini, splurge on a delicious, intensely-flavored Italian olive oil, and use fresh organic lemons and unrefined sea salt or rock salt.

Ingredients

Amounts are up to you. I seem to make this sauce a bit different every time, depending on what I'm in the mood for.


Method

  1. Fill a mason jar about 1/2 full with tahini.
  2. Add salt, to taste, if the tahini isn't already salted.
  3. Add lemon juice, to taste.
  4. Mash up roasted garlic with a fork and stir that in too.
  5. Stir in filtered water, a bit at a time to avoid clumping, until desired consistency is reached.
  6. Taste and add more salt, lemon, or garlic if necessary.
  7. When you're done using it, screw on the lid and store it in the fridge. It will last just under a week, but you'll probably finish it long before then! ;)
